The Waterford Blaa!
In 1689, Dutch Prince William of Orange was made King of England, and it was he who introduced Protestant refugees from France into Ireland.
The refugees who settled in Waterford were given part of this old Franciscan Friary as a place of Worship and so it became known as the French Church – A name that has lasted to this day.
The French settlers have had a lasting impact on Waterford, one that can still be tasted today – especially at breakfast – as they introduced a new type of bread to Waterford, known locally as the Blaa. Made using white flour, which was something of a delicacy at the time, the Blaa is as popular today inWaterford City as it was 300 years ago – If you get the chance, make sure you try some!
